Ingredients

Bell pepper, large, halved and deseeded6
Turkey mince800g
Plain rice125g
Onion, finely diced1
Courgette, diced1
Garlic cloves, minced2
Chopped tomatoes, tinned400g
Dried oregano1 tsp
Olive oil1 tbsp
Black pepper0.5 tsp
Cheddar cheese, grated150g

Method

  1. 1.Cook the rice: bring a pan of water to the boil, add the plain rice and simmer for about 12 minutes, until tender. Drain and set aside.
  2. 2.Cook the filling base: heat the olive oil in a large pan. Cook the onion and courgette until softened, about 5 minutes. Add the garlic and cook 1 minute more.
  3. 3.Brown the turkey: add the turkey mince and cook, breaking it up, until browned through.
  4. 4.Combine the filling: stir in the cooked rice, chopped tomatoes, dried oregano and black pepper. Simmer for a few minutes until slightly thickened.
  5. 5.Fill the peppers: arrange the pepper halves cut-side up in an oven-safe dish. Spoon the filling into each half, pressing down gently.
  6. 6.Top with cheese: sprinkle the grated cheddar over the top of each filled pepper.
  7. 7.To freeze, cool completely first — using cooked rice here keeps the texture right after freezing and reheating, since raw rice can go mushy or undercook when baked from frozen — then cover tightly and freeze in the dish.

How to cook

  1. 1.Cover with foil and bake at 190°C (fan 170°C) for 30 minutes, then uncover and bake until the cheese is golden and the peppers are tender.
